Make This: Barney Butter Strawberry ShortCake
Summertime is prime time for strawberries. This low carb version of Strawberry Shortcake takes the best of the sweet fruit and combines it with Barney Butter for a delicious Memorial Day treat!
½ cup plus 3 tbsp Barney Butter Powdered Almond Butter
¼ tsp baking powder
⅛ teaspoon sea salt
1 tbsp melted coconut oil
1 egg
1 tablespoon maple syrup
2 tablespoon almond milk
1- Preheat oven to 350 degrees.
2- In a small bowl, mix Powdered Almond Butter, baking powder, and sea salt.
3- In a separate small bowl, whisk melted coconut oil, egg, maple syrup, and almond milk together until well combined.
4- Combined with wet with the dry and mix thoroughly.
5- Divide the mixture in two and shape them into biscuit form.
6- Place them on a cookie sheet lined with parchment paper and bake for 15 minutes.
