Where are my coconut lovers at!? So underrated IMO. I made this recipe doubling the coconut goodness AND added extra crunch with Toasted Coconut Roasted Cashews (ate about half the container in the process bc ADDICTING). They also make for a perfect last min gift for neighbors or coworkers (mine loved them), or bring them to your party and top with some vanilla nice cream!
What You'll Need:
- 2 cups almond flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 cup sugar
- 1/4 cup cashew butter
- 2 tbsp coconut oil (melted)
- 2 tbsp maple syrup
- 2 tsp vanilla
- 3 tbsp almond milk
- 1/4 cup shredded coconut
- 1/2 cup chopped karmanuts coconut cashews + extra to use on top
- 1/4 cup chocolate chunks
Directions:
- Combine all dry ingredients
- Mix wet ingredients together until well blended
- Combine wet and dry ingredients
- Fold in the Coconut, Cashews and Chocolate Chunks
- Spread into prepared 8X10 or 9X9 pan
- Bake at 350 for 30 minutes or until golden
