1 ½ pounds cherry tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 Tbsp Montana Mex Extra-Virgin Avocado Oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp Montana Mex Sweet Seasoning⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 garlic cloves, peeled and smashed⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 sprigs thyme⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 sprigs fresh oregano, plus more for garnish⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions:⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat oven to 400 degrees Fahrenheit. Put the tomatoes in a rimmed baking dish or preheated cast iron skillet. Add the oil, Montana Mex Sweet Seasoning, garlic, thyme and oregano sprigs. Toss together. Roast in the oven for 20 minutes, until the tomatoes begin to blister and the liquid is bubbling and caramelizing. Then set the oven to broil and cook for a couple minutes more, until the tomatoes start to blacken on top.⠀
